The purpose of this study is to make a case to the importance of customer orientation and business administration ability for aspiring startup founders and entrepreneurs involved in small scale Korean restaurants industry. Specifically, we examined the effects of customer orientation, customer relationship management, and store management activities on start-up performances of small Korean restaurants. An empirical analysis is performed with the data collected through the managerial diagnosis survey on the Korean restaurant owners, which was done in the Seoul Metropolitan Government's consulting support process for the small businesses. The results showed that customer orientation affects both customer relationship management and the store operation activities, while the store operation activities influenced the overall performance. That is, store operation activities were found to partially mediate the relation between customer orientation and performance. The results imply that even in the case of small-scale Korean restaurants, owners and/or managers should have customer-oriented perspectives along with the store operation capabilities for the improvement of profitability.

본 연구는 소규모 한식음식점 운영자의 고객지향성과 고객관계관리 및 점포운영활동이 성과 에 미치는 영향에 대한 연구를 통해 예비 창업자 및 창업 관련 종사자에게 고객지향적 사고와 경영관리능력의 중요성에 대한 정보를 제공하고자 한다. 이를 위해 서울시가 소상공인 컨설팅 지원과정에서 한식음식점 대표자를 대상으로 벌인 경영진단 설문조사 결과를 실증분석 하였다. 연구 결과 고객지향성은 고객관계관리 및 점포운영활동에 영향을 미치는 것으로 나타났고, 점포 운영활동 또한 성과에 영향을 미치는 것으로 나타났다. 점포운영활동은 고객지향성과 성과와의 관계에서 부분 매개하는 것으로 나타났다. 소규모 한식음식점의 경우에도 사업성과를 내기 위해 서는 경영자가 고객지향적 사고 및 점포운영능력까지 갖추어야 한다는 시사점을 제공하고 있다.
