As studies on the starch properties of barley and naked barley, the granule size frequency distribution, amylose content and blue value of starches seperated from the 11 varieties of barley and 13 varieties of naked barley, which were grown paddies of Office of Rural Development, Iri, Korea in 1972, were determined. The results were as follows: 1. The type of the barley and naked barley starch granules was short oval and the ratio of minor axis to major axis was 1 to 1.2. Diameter of the starch granules was in the range of 4.0~6.0u to 32.0~37.0u is and medium granule of the naked barley was 10~22u on the contrary to 16~20u of the barley starch. Average size of the naked barley starch was larger than that of the barley and some differences were observed between varieties. 2, Amylose contents of the barley and the naked barley starches were in the range 27.5~30.5% and average of the barley was 29.4% a little higher than 28.2% of the naked barley and observed of some differences between varieties. 3. Blue values of the barley and the naked barley starches were in the range 0.47~0.54, and average was 0.51.

보리전분(澱粉)의 품종별(品種別) 특성(特性)을 알아보기 위하여 1972년도 전북농촌진흥원(全北農村振興院)에서 재배한 겉보리 11개 품종(品種)과 쌀보리 13개 품종(品種)을 재료(材料)로 사용하여 전분(澱粉)이 입경분포(粒經分布), amylose 함량(含量), blue value 등을 조사(調査)한 결과(結果)는 다음과 같다. 1) 보리전분입자(澱粉粒子)는 단경(短經)과 장경(長經)의 비(比)가 1 : 1.2정도 되는 단타원형(短楕圓形)이고 평균입경(平均粒經)이 4.0~6.0 u에서 32.0~37.0u의 크기를 갖는 입자(粒子)들이 분포(分布)하며 쌀보리는 18u에서 22u의 중립(中粒)이 전체(全體)의 34%, 겉보리는 16u에서 20u의 것이 약 50%를 점유(占有)하고 있었다. 겉보리보다 쌀보리의 평균입경(平均粒經)이 약간 크고 품종간(品種間)에도 약간의 차이(差異)가 있었다. 2) Amylose함량(含量)은 27.5%에서 30.5% 사이에 분포(分布)하고 일반적으로 겉보리(평균 29.4%)가 쌀보리(평균 28.2%) 보다 높았다. 겉보리 중에서는 하가네무기가 높고 밀양 3호, 바소이등이 낮았으며 쌀보리 중에서는 아이주하다가가 겉보리와 비슷하게 높고 방주, 광계 33호가 낮은 값을 나타내고 있었다. 기타 나머지 품종(品種)들은 평균치(平均値)와 비슷하였다. 3) Blue value는 0.47에서 0.54 사이에 분포(分布)하고 그 평균치(平均値)는 0.51이었으며 겉보리와 쌀보리 간(間)에 큰 차이(差異)가 없었다. 겉보리 중에서는 밀양 6호, 밀양 4호, 밀양 7호, 삼덕, 수원 18호 등이 평균치(平均値)보다 높고 대개가 낮았으며 쌀보리 중에서는 청맥, 기까이하다가, 아이주하다가 등이 높고 완주 봄쌀보리, 방주등이 낮은 값을 나타내고 있다. 나머지 품종(品種)들은 평균치(平均値)와 비슷하였다.
