This study aims to arrive at the dating of the Korean cookery book Juchanbang by examining the spellings and phonological changes as appeared in the manuscript. Juchanbang appeared to have copied passages of earlier texts. Indeed, there are sentences which contain errors typically made when copying from other books. The old text attached to the cover of the book suggests that the author of the manuscript had some links with to the government office of Ganghwa-do during the Joseon Dynasty. The linguistic features of Juchanbang indicate that it was written before the mid-17th century. First, the consonant ‘ㄷ’ can be found as stem-final consonant. Second, the manuscript shows no cases of ㄷ palatalization. However, there are some cases of hypercorrection of this phenomenon. Third, the manuscript contains no cases of the ㅺ>ㄲ change in verbal stem-final consonant clusters. Finally, ‘물’ is the only word showing vowel rounding after a pure consonant. With regard to this phenomenon, the hypercorrection ‘므티-’ can also be found. As a result, the Juchanbang appears not only to date from before the mid-17th century but also to be the earliest Korean cookery book ever found, which copied from earlier cookbooks of the 16th century as evidenced by the phonological phenomena found throughout the manuscript, which are characteristic of the 16th-century Korean language.

이 논문은 한글 음식조리서 『주찬방』의 필사 연대를 판단하기 위해 『주찬방􋺸에 나 타난 표기와 음운변화를 논한 것이다. 이 논문에서 밝힌 주요 내용을 요약하면 다음 과 같다. 『주찬방』은 앞선 시기의 다른 문헌을 보고 베낀 것으로 보인다. 한글 방문 문장에 서 다른 책을 보고 베껴 쓸 때 발생하는 필사의 오류가 발견되고 있기 때문이다. 『주찬방』의 앞표지 이면에 붙인 고문서의 내용으로 보아 이 책은 조선시대 강화도에 있 었던 관아 강화부(江華府)와 연관된 인물이 필사한 것으로 판단한다. 『주찬방』에는 다음과 같은 언어적 특징이 나타난다. 첫째, 어간말 종성에 자음 ㄷ 이 쓰였다. 둘째, ㄷ구개음화가 실현된 예는 없으나 이 변화의 과도교정형이 나타나 있다. 셋째, 한국어 음운사에서 17세기 후기에 나타난 용언 어간말 자음군 ㅺ>ㄲ 변 화가 『주찬방』에서는 전혀 나타나지 않는다. 넷째, 순자음 뒤 원순모음화 ㅡ>ㅜ가 실 현된 것은 ‘물’이 유일하고, 이 변화에 대한 과도교정형 ‘므티-’가 발견된다. 순자음 뒤의 원순모음화 ㆍ>ㅗ 및 ㅡ>ㅜ는 15세기 이전에 일어난 것이 아니라 ㆍ의 비음운 화가 진행되고 있었던 17세기에 발생한 것으로 봄이 옳다. 이상의 특징으로 볼 때, 『주찬방』은 17세기 중기 이전에 필사된 것으로, 현재 발견 된 한글 음식 조리서 중 필사 연대가 가장 빠른 한글 음식조리서로 판단한다. 본문의 한글 문장에는 17세기 전기 한국어의 음운사적 특징이 반영되어 있고, 기존 자료를 보 고 베낀 영향으로 16세기 한국어의 음운사적 특징도 일부 반영된 것으로 보인다. 『주찬방』은 국어사 연구는 물론 한국의 전통 음식 조리법과 음식문화 연구에 중요한 자료가 될 것이다.
