In order to develop new materials for the functional food, the components of broccoli sprout cultivated under high dissolved oxygen concentration was studies. Chemical composition, vitamins, minerals, total phenolics compound and total flavonoids of broccoli sprout cultivated on 20 ℃ for 7 days. The chemical composition of broccoli sprout was 89 %(w/w) moisture, 4.05 % crude protein, 1.25 % crude fat, and 5.65 % crude ash. Vitamin contents were 1,784 IU Vit. A,
65.7 mg/100g Vit. C and 10.9 mg/100g Vit. E. Mineral contents were 92.8 % Ca, 140.7 % P, 60.4 % Mg, 10.3 % Na, and 0.78 %. Total phenolic compounds and total flavonoids were 52.4 ± 5.17 mg/g·dw and 16.45 ± 2.74 mg/g·dw, respectively. On the basis of chemical analysis, the broccoli sprout showed to have relatively high contents of Vit. A, Vit. C, minerals of Ca, P, Mg etc., total phenolics and total flavonoids. These results suggested that broccoli sprout was
found to be a useful material of natural health food for the functional food development.
