Formation of levan oligosaccharides by levansucrase from Zymomonas mobilis.

Levan oligosaccharides were synthesized from sucrose as fructosyl donor by transfructosylation reaction using a recombinant levansucrase (EC 2.4.1.10) of Zymomonas mobilis. The effects of reaction temperature, pH, and initial sucrose concentration on the production yield of levan oligosaccharides were investigated. Optimum conditions for the formation of levan oligosaccharides (degree of polymerization (DP) of 3-6) were: 40oC, pH7, and 60% of sucrose. Extended reaction time caused decrease of levan oligosaccharides formation. Under optimized conditions, the yield of levan oligosaccharides was 26%.
