The β-carotene 15,15'-monooxygenase, converts β-carotene to retinal, catalyzes in the synthesis of vitamin A from β-carotene. The enzymatic production of retinal from β -carotene was investigated using recombinant β-carotene 15,15'-monooxygenase from mus musculus. The substrate solution was prepared by emulsion method using chloroform and tween40. The optimum concentration of detergent was 5 % tween40. The optimum concentration of substrate and enzyme for retinal production were 200 ㎎/ ℓ of β-carotene and 0.2 units/㎖ of enzyme. Under the optimum conditions, Mus musculus β-carotene 15,15'-monooxygenase produced approximately 75 ㎎/ℓ retinal after 12 h of reaction time with a productivity of 6.25 ㎎/ℓ h.
