Bacterial cellulose (BC) has various applications as new functional material as well as diet foods because of its unique properties. These days, bacterial cellulose is mostly
produced in shaking/agitated cultivation because of the advantage of high productivity than in static cultivation. New fermentation systems utilizing a centrifugal impeller and centrifugal inclined impeller were developed for the improved production of bacterial cellulose. A 6 flat-blade turbine impeller was used as a control system. The various features including flow pattern in the fermenter and volumetric oxygen transfer coefficient (kLa) of these fermentation systems were investigated. The flow pattern of the fermenter equipped with these impellers was determined using acrylic acid copolymer beads (2mm diameter) in distilled water in a 2-L jar fermenter at 100, 300 and 500 rpm.
The values of kLa were determined by analysis of data for the dissolved oxygen concentration versus time. These fermentation systems will be investigated for the production of bacterial cellulose and water-soluble oligosaccharides in future.
