Antioxidant activity of novel chitooligosaccharides derivatives

The aim of this research is to improve antioxidant effect of chitooligosaccharides (COS) by grafting cinnamic acid, coumaric acid or ferulic acid at C6 position of chitooligosaccharides. The antioxidant effect of novel COS derivatives was investigated against hydroxyl, superoxide and alkyl radicals using electron spin resonance method (ESR). Furthermore their direct radical scavenging effect by 2',7'-dichlorofluorescein (DCF) intensity were significantly increased in a
time- and dose-dependent manner in live cells. Three COS derivatives were synthezied more soluble in water and non-cytotoxic compared with phenolic acids. These results suggest that COS derivatives have antioxidant effect stronger than COS and can be applied as a free radical scavenger in living systems.
