Effects on antioxidant activities of sprouts by utilizing dissolved oxygen controller

Dissolved oxygen effects on the antioxidant activities of extracts from sprouts were conducted for Broccoli, Red radish, Red kale, Kale. To utilize dissolved oxygen controller, the dissolved oxygen concentration controlled by 20ppm to 30ppm under 20 to 25 ℃, circulating oxygen water in a way that sprouts were grown and conducted to compare the antioxidant activities of 8.11, 20, 30ppm.
Analyzing samples of four kinds of species of Broccoli, Red radish, Red kale, Kale were prepared from 10g samples putting in 60ml ethanol and 40ml water at 60℃ for 4hours. Total poly-phenol contents were measured by the Folin-Denis method and total flavonoid contents measured by transformed Davis method. Based on Blois method, radical-scavenging activities of extracts were examined by using DPPH(1,1-diphenyl-2-picrylhydrazyl). Growth rate of sprouts showed no change, Up to 30ppm, the total poly phenol contents of Br o c c o li was o b t a in e d a t 1 7 0 . 9 2 m g / 1 0 0 g a n d radical-scavenging activities of the broccoli were the highest as 84.45%
