Recognizing that it is time to conduct research on cooking methods that have made humans truly human and contributed decisively to human evolution by making people the most beautiful and attractive beings, this study focused on cooking methods directly related to human evolution. The research utilized empirical findings from previous studies and various materials on cooking methods for data collection. In particular, it examined not only relevant reports, periodicals, books, and newspaper articles, but also actual cooking equipment that has been developed. As a result, this study presents practical implications with the expectation that the development of Gwangsik (光食, light-based food preparation) methods will not only contribute to the advancement of Korea’s foodservice industry but also serve as a foundation for the development of traditional Korean food culture industries and become a future growth engine that can accelerate human evolution.

인간을 인간으로 만들어주고, 가장 아름답고 매력적인 사람으로 만듦으로써 인류 진화에 절대적인 이바지를 한 음식을 만드는 조리방법에 관한 연구가 이루어져야 할 때라고 인식한 본 연구는 인류의 진화와 직접적인 관련이 있는 조리방법을 연구하였다. 본 연구는 자료수집 방법으로 기존 선행연구들이 분석한 실증 결과와 각종 조리방법 자료를 활용하였다. 특히, 관련 보고서, 정기간행물, 단행본, 신문기사 등만 아니라 실제 개발된 조리기기 등의 자료 도 고찰하였다. 그 결과, 본 연구는 우리나라 외식서비스산업의 발전뿐만 아니라 인류 진화를 획기적으로 촉진할 수 있는 광식(光食) 관련 조리방법 개발을 통해 우리나라 전통음식문화산업의 발전 기반 구축과 미래 신성장동력이 되기를 기대하면서 실무적 시사점도 도출했다.
