The domestic coffee franchise market faces various uncertainties, including oversaturation, rapid shifts in consumer trends, and external economic factors. It has now entered an era of competition focused on survival, differentiation, and innovation, moving beyond growth. This study aims to provide a deeper understanding of coffee franchises and relevant implications for both industry and academia through a case study of Hasamdong Coffee's growth. To this end, we examine Hasamdong Coffee's key activities and achievements, highlighting its ambidextrous innovation activities (exploitative and exploratory). Furthermore, we find that Hasamdong Coffee's corporate research department and franchisee council are structural differentiation and decentralization factors that influence ambidextrous innovation activities.

국내 커피 프랜차이즈 시장은 과포화, 브랜드·경쟁 구도 변화, 소비 트렌드의 빠른 이동, 그리고 외부 경제 요인 등 다양한 불확실성에 직면해 있으며, 성장에서 이제는 생존과 차별화, 혁신의 경쟁 시대로 진입하였다. 이 연구의 목적은 하삼동커피의 성장 사례분석을 통해 산업과 학계 모두에게 커 피 프랜차이즈의 심층적 이해와 관련 시사점 제공에 있다. 이를 위해 하삼동커피의 주요 활동과 성 과를 양면적 혁신 활동(활용적 활동과 탐색적 활동) 사례를 살펴보았다. 아울러 하삼동커피의 기업 부설 연구전담부서와 가맹점주협의회가 양면적 혁신 활동에 영향을 미치는 것으로 제시된 구조적 분화와 분권화 요인임을 발견하였다.
