The purpose of this study was to analyze the visit intention and importance-satisfaction of local food items in Busan City. A survey was conducted for one month from July 15 to August 14, 2024, and 377 questionnaires were used for multiple regression analysis and IPA analysis. First, in the relationship between the perception of local food in Busan City and the intention to visit, culturality, locality, and historicity were found to have a significant effect on p<.001, and food quality was rejected. Second, the attributes located in the first quadrant showed high satisfaction and importance. In the second quadrant, the importance was high but the satisfaction was low. In the third quadrant, the satisfaction and importance were low. In the fourth quadrant, the satisfaction was high but the importance was low. As practical implications, since Busan local food is a problem in quality factor, it is expected that Busan local food will play its role as a tourism product by improving the quality factor of food.

본 연구는 부산시 향토음식인식이 방문의도와 향토음식 품목에 대한 중요도-만족도 분석을 하고자 2024년 7월 15일부터 8월 14일까지 한 달간 설문조사를 실시하여 377부를 사용하여 다중회귀분석, IPA분석을 실시하였다. 첫째, 부산시 향토음식 인식과 방문의도 간의 영향 관계에서 문화성, 지역성, 역사성은 p<.001에서 유의한 영향을 미치는 것으로 나타났고, 음식 질은 기각되었다. 둘째, Ⅰ사분면에 위치하는 속성들은 높은 만족도와 중요도를 보이는 항목으로 바다장어요리, 곰장어요리, 복어요리, Ⅱ사분면은 중요도는 높지만 만족도는 낮은 항목으로 생선회, Ⅲ사분면은 만족도와 중요도가 모두 낮은 항목으로 동래파전, 완당, 흑염소, Ⅳ사분면은 만족도는 높지만 중요도는 낮은 항목으로 돼지국밥, 밀면이 포함되었다. 실무적 시사점으로는 부산시 향토음식은 질 요인에서 문제가 되고 있기 때문에 음식에 질 요인에 해당하는 것을 개선하여 부산시 향토음식이 관광상품으로 그 역할을 다할 것이라 본다.
