In this paper, we define the concept of ‘Japanese for food service’ and proceed with the design of weekly lesson plans. Drawing inspiration from the hybrid learning model, we incorporate educational technologies into classroom instruction to enhance learning outcomes. Furthermore, we explore the integration of the interactive AI service, ChatGPT, in the lessons to boost learner engagement. We ensure that learners actively utilize various tools such as quizlet, ChatGPT, e􋹲books, MiriCanvas, and Padlet, fostering a self􋹲directed learning environment. Through the utilization of diverse tools for ‘Japanese for food services’, we identify strategies that promote self􋹲directed learning, cater to learners' proficiency levels, and facilitate collaborative group activities. By referencing the examination subject related to ‘Japanese for food services’, we devise weekly instructional scenarios. These scenarios encompass Japanese script and pronunciation practice, vocabulary acquisition related to restaurant settings, exercises in practicing reservation confirmation and seating guidance expressions, explanations and recommendations for Korean, Chinese, and Japanese cuisines, descriptions and recommendations for beverages, handling customer requests, providing restaurant usage guidance, addressing customer complaints, practicing apology and forgiveness expressions, and transactional guidance. Furthermore, beyond acquiring conversational skills pertinent to restaurant scenes, we integrate the learning of Japanese manners and norms essential for interacting with Japanese customers.

본고에서는 외식서비스일본어의 개념을 정의하고, 주차별 수업의 설계를 진행하였다. 하이 브리드러닝 모형을 참고로 하여, 교실수업에 에듀테크를 추가적으로 설계하여 학습효과를 높 일 수 있도록 하였다. 또한 대화형 인공지능 서비스인 챗GPT를 수업에서 활용하여, 학습자들 의 참여도를 높일 수 있는 방법도 고안해 보았다. 학습자가 수업 참여에 있어서 퀴즐렛, 챗 GPT, e􋹲book, 미리캠버스, 패들렛 등 다양한 도구를 적극적으로 활용할 수 있도록 하였다. 외 식서비스일본어 수업에서 다양한 도구를 활용하여 자기주도학습 촉진 전략, 학습자 수준 반 영 전략, 동일 집단군 형성 지원 전략으로 활용할 수 있는 내용을 확인할 수 있었다. 외식서비스일본어 관련 검정과목을 참고로 하여 주차별 운영 장면을 설계할 수 있다. 일본 어 문자와 발음, 외식 관련 어휘 학습, 예약확인 문형 연습, 좌석안내 문형 연습, 한식 메뉴 설명과 추천 문형 연습, 중식 메뉴 설명과 추천 문형 연습, 일식 메뉴 설명과 추천 문형 연습, 음료 설명과 추천 문형 연습, 요청 사항 응대 문형 연습, 레스토랑 이용 안내 문형 연습, 고객 불만 응대 문형 연습, 사죄표현과 양해표현 문형 연습, 계산 안내 문형 연습으로 주차별 학습 을 구성하였다. 또한, 외식서비스일본어 장면에 적합한 회화문 습득 이외에도, 일본인을 접객 하면서 이해하고 있어야 하는 일본인의 매너와 규범을 함께 습득할 수 있도록 하였다. 이를 통하여 외식서비스 종사자의 전문성을 한층 높일 수 있고, 언어적 접근에서 그치는 것이 아 닌, 문화와 규범의 전반을 통합적으로 학습할 수 있도록 설계하였다.
