Coffee is called ‘the drink of the bourgeoisie.’ This paper reconstructs the process of coffee establishing a culture of taste after it was introduced to the Korean Peninsula. Coffee was first introduced by the French missionary Berneux around 1961 and was spread to the upper classes from the foreigners. Later, as the general public started to consume it, it presented the experience of the equality of taste. Coffee was a luxury product that was entirely dependent on imports. Therefore, there was a phase in which the special consumption patterns of the upper classes continued. Until the 1920s of the Japanese colonial period, coffee was mostly a culture enjoyed by the privileged class and in the 1930s, coffee became a common practice in connection with the cafe and dabang culture. Coffee was a by-product of the ‘colonial rule system’ that entailed the hierarchical nature of taste. Just as sophistication has a hierarchical nature, taste also has a political nature. By looking at the process of the spread of coffee culture, we can make a reflection on modern tastes.

이 연구는 ‘자문화기술지(auto-ethnogrphy)’의 연구방법을 통해 연구자의 경험과 연구대상을 겹쳐내는 글쓰기를 시도한다. 1장에서는 연구자가 경험한 커피문화와 한반도에서 커피가 수용되는 역사적 과정을 함께 기술 했다. 커피는 ‘근대의 음료, 매혹의 음료’였다. 그리고 세련됨의 표상이기 도 했다. 2장에서는 문헌을 통해 한반도에서 커피가 유입되는 과정을 재구 성했다. 커피가 한반도에 유입된 시기는 대략 1861년 즈음이다. 프랑스 선교사 베르뇌에 의해 조선에 유입된 커피는 조선의 상층계급으로 전파되 었다. 이후 민중계급이 커피를 마심으로써 취향의 평등성을 이뤄냈다. 커피는 전적으로 수입에 의존해야 하는 기호품이다. 그렇다보니 상층계급 의 특수한 소비형태가 지속되었다. 3장에서는 일제강점기인 1920년대 문 학 텍스트를 통해 그 시기 커피가 일상 소비문화에서 어떤 위치에 있었는 가를 추론해 보았다. 1920대까지만 해도, 커피는 기호품으로서 비교적 비싼 품목에 속했고, 제한적으로만 소비되었다. 4장에서는 1930년대에 이르러서 카페, 다방문화와 연결하여 커피의 일상적 소비가 이뤄졌음을 살폈다. 결론에서는 현대 한국인에게 커피라는 일상문화가 어떤 정치적 성찰을 촉구하는지에 대해 기술했다. 한국인들은 인스턴트 커피에서 자판 기 커피, 믹스커피에 이르는 커피 향유의 변화과정을 겪었다. 커피는 때로 는 세련됨의 상징이었고, 취향의 구별짓기이기도 했다. 커피 소비문화는 제국주의의 효과, 전지구적 자본주의의 영향으로 형성되었다. 커피는 취 향의 계급성을 안고 있는 ‘식민지 지배체제’의 부산물이다. 세련됨에는 계급성이 있듯이, 취향의 정치성도 존재한다. 커피 문화의 확산 과정을 통해 근대적 취향에 대한 성찰이 이뤄질 수 있다.
