In this study, text mining, one of the unstructured data analysis methods that can effectively analyze large amounts of textual information, was conducted to analyze trends and topics of research related to Korean culinary in depth. To this end, 63 Korean culinary related studies were collected over the past decade. We analyze the title and abstract of each paper into text mining-based topic modeling. As a result of analyzing the basic status of the results, the following features were found in recent research on Korean culinary. First, the title and abstract analysis results of the Korean culinary study showed high frequency of words such as "food," "study," "menu," "restaurant" and "education." Second, five topics were drawn under the title of Job of Food Service, Globalization of Korean Food, Korean Food Menu, Korean Food Ingredient, and Culinary Education. Third, Topic modeling results showed that studies related to Korean food menus accounted for the highest proportion of the five topics. This study not only identifies the characteristics of recent research trends in Korean culinary, but also applies text mining techniques that analyze vast amounts of unstructured text information to derive meaning.

본 연구의 목적은 한식 조리에 관한 연구동향을 분석하고 관련 연구의 구조를 파악하는 데 있다. 본 연구의 목적을 달성하기 위해 대량의 텍스트 정보를 효과적으로 분석할 수 있는 비정 형 데이터 분석 방법 중 하나인 텍스트 마이닝을 실시하여 한식 조리 관련 연구 동향과 주제를 심층적으로 분석하였다. 이를 위해 지난 10년간 63건의 한식 조리 관련 연구가 수집하여 각 논 문의 제목과 개요를 텍스트 마이닝 기반 토픽 모델링으로 분석하였다. 수집 데이터의 기본정보 현황분석, 키워드 빈도 분석, 토픽 모델링을 수행한 결과, 최근 한식 조리 연구에 다음과 같은 특징이 나타났다. 한식 조리 연구의 제목과 논문초록을 분석한 결과, ‘음식’, ‘연구’, ‘메뉴’, ‘식당’, ‘교육’ 등의 단어 빈도수가 높게 나타났다. 이어 진행된 토픽 모델링분석 결과, ‘외식산업 인사관 리’, ‘한식 세계화’, ‘한식 메뉴’, ‘한식 재료’, ‘조리 교육’이라는 다섯 가지 주제가 도출되었다. 이 러한 토픽 모델링의 결과인 5가지 주제 중 ‘한식 메뉴’와 관련된 연구가 가장 높은 비중을 차지 하는 것으로 나타났다. 이러한 결과는 최근 한식 조리 트렌드의 특성을 파악할 뿐만 아니라 방 대한 비정형 텍스트 정보를 분석하는 텍스트 마이닝 기법을 적용해 의미를 도출하는데 그 의미 가 있으며, 본 연구에서 도출된 연구 결과의 토픽 모델링 분석 기법 및 텍스트 마이닝은 향후 한식 조리의 연구 방향 및 연구 주제 구축을 위한 기초 및 비정형 연구 데이터의 분석 기법으 로 널리 활용될 것이다.
