This paper focuses on the structure of Domundaejak (屠門大嚼), and considers it in the context of the historical flow of the times. As a result, the following two aspects were confirmed. First, the composition and personality of the work. Domundaejak consisted of the food reserves, and filled each category with the principle of simplicity. Heo, gyun(許筠) compared the food and ingredients corresponding to each title. As a result, Domundaejak was able to convey information and knowledge together, and through the Domundaejak, Heo, gyun shared the tastes and memories he experienced. Second, background and flow of formation. The reason for the writing found in Domundaejak is a vicarious satisfaction and an alert. The choice of food as a target for vicarious satisfaction can be found in the fact that it was the material that made the fall of the situation most sensitive, and that appetite and power were closely related. In addition, a tendency that was relatively generous to appetite was also a factor that made up the article about food, and this also relates to Heo, gyun’s predecessors, who had a relatively loose restriction of appetite and libido. As a result, Domundaejak is a new attempt to systematically present the information and knowledge gathered from Heo, gyun’s experience, and make the reader understand the meaning of writing about food reserves and the diachronic interconnectedness of each other.

본고는 ｢도문대작(屠門大嚼)｣의 구조와 결에 집중하고, 그것을 역사적 흐름과 시대의 맥락 속에서 조감하는 데 초점을 두었다. 그 결과 다음과 같은 두 가지 양상을 확인할 수 있었다. 첫째, 성격과 구성의 측면이다. 허균은 ｢도문대작｣을 통해 그가 경험한 맛과 그 추억을 함께 전하고 있다. 간소함을 원칙으로 삼아 특정한 지역 에서만 나거나 특별한 맛을 지닌 좋은 식품으로 ｢도문대작｣의 여섯 개 범 주를 채웠는데, 그 범주는 식재료를 기준으로 구성되었다. 표제에 해당하 는 음식과 식재료의 부각을 위해 품등(品等)을 비교하고, 사실을 고증하기 도 했다. 이를 통해 ｢도문대작｣은 정보와 지식을 함께 전할 수 있었다. 따 라서 농서(農書)나 조리서와 비교하면 실용적이라 하기는 힘들겠지만, 그 성격은 이론보다 실용에 가깝다. 요컨대 ｢도문대작｣은 허균이 직접 체험 한 맛과 그 추억, 식품의 정보와 지식으로 구성된 저술이다. 둘째, 성립의 배경에 관한 내용이다. ｢도문대작인(屠門大嚼引)｣에서 찾 을 수 있는 집필의 이유는 대리만족과 경계(警戒)이다. 가까스로 버텨내던 정계에서 떨어지게 된 그가 선택한 방법은 먹어본 셈 치는 대리만족을 꾀 하는 일이었으며, 세상을 경계했지만 반면교사의 대상이 되어버린 자신을 경계로 삼기를 요구한 것이다. 대리만족을 위한 대상으로 식품을 선택한 계기는 상황의 낙차(落差)를 가장 예민하게 느끼게 하는 소재가 바로 그것 이었다는 점, 식욕과 권력의 밀접한 연관성 등에서 찾을 수 있다. 아울러 식욕에 비교적 관대했던 성향도 식품으로 글을 구성하게 만든 요인이었 는데, 이 점은 식(食)과 색(色)에 대한 제약이 다소 느슨했던 그의 선배들 과도 통한다. 이로써 볼 때, ｢도문대작｣은 단순한 식품 소개에서 벗어나 자신의 체험 을 통해 수집한 정보와 지식을 체계적으로 제시한 새로운 시도를 보여 주 었고, 본격 유서(類書)에 선행하는 박물학서(博物學書)의 역할을 하였으며, 식품과 그에 대한 글쓰기가 지닌 의미와 통시적 연계성을 음미하게 만들 어주는 계기로서 기능하였다. 이것이 ｢도문대작｣의 가치이자 문화사에서 의 위치이다.
