Investigation on Muck (Traditional Starch Jelly) Made of Typical Ingredients Such as Acorn, Mung Bean and Buckwheat

The recent increase in obesity has caused the several chronic metabolic diseases and emerged as a serious social problem. Also, the increased mortality due to obesity needs the developing on improved foods. Muck is the one of the starch processing traditional food. In this study, acorn mung bean, buckwheat are used as traditional food in Korea. Muck diet is surveyed appropriately for anti-obesity treatment based on previous studies. Rutin and quercetin in Buckwheat help the prevention of diabetes and atherosclerosis and the treatment of high blood pressure. They change the metabolism of cholesterol and prevent the formation of gallstones, obesity coronary heart disease and cancer. The characteristics of acorns are bitter and astringent tannins. They belong to the polyphenolic compounds. Astringent tannins reduce triglyceride metabolism and synthesis in the body of rats. Gallic acid, digallic acid, gallotannin are effective in the precaution of hyperlipidemia and fatty liver in rats. Mung beans contain vitexin and isovitexin which are associated with decrease in adipocyte precursor cells. Especially vitexin inhibits fat synthesis and gene expression of inflammatory cytokines. They inhibit weight gain, reduce fat and blood lipid. Therefore this study will be helpful for proving the those effects.
