With the increase of the number of people enjoying coffee, one’s desire for higher quality tasting coffee is revealed. The quality and grade of coffee become more and more improved. Coffee producers are trying to make and consumers are also trying to search for specialty coffees. It has been realized that the flavor of coffee depends on the coffee-producing region and the growing condition. It has also been realized that the species of coffee beans influence the taste of coffee. However, coffee education is currently underway mainly for the simple job training of baristas such as roasting, extracting and customer service, and very little education on green coffee is being done. Therefore, this study is to contribute to the basic research material for the curriculum development of green coffee education. Through surveys to coffee instructors nationwide to investigate the current situation of green coffee education and awareness level of green coffee, the requirements of green coffee education has been analyzed. Further, the teaching direction and learning factors of green coffee have also been analyzed through Delphi Analysis to coffee professionals. Based on the result thereof, this study is to suggest systematic lecturing-learning standards by presenting an education goal of green coffee, selection of education contents, determination of subject name, and composition and listing of education units to be learned. This study will be one of the basic research materials to plan and design the curriculum for green coffee education.

커피가 대중화되어감에 따라 입맛에 맞는 고급커피를 찾아 즐기는 모습이 엿보이 고 있다. 커피의 품질과 등급은 점점 더 고급화되어가고 생산자와 소비자도 스페셜 티 커피를 생산하고 또 구매하려고 하고 있다. 보통 커피의 향미는 산지와 재배 환 경에 따라 달라지고 그 특성이 결정지어지므로, 커피 한 잔의 향미와 품질은 그린커 피에서부터 시작된다는 것을 그린커피 연구를 통해 인식하게 되었다. 하지만 현재 커피교육은 단순히 커피 로스팅, 추출, 서비스의 바리스타 실무에 주력하고 있고 그 린커피에 대한 전문적인 지식 교육은 미비한 실정이다. 따라서 본 연구는 그린커피 교육을 위한 교과과정을 개발하기 위한 기반 자료를 마련하고자 하였다. 전국의 커 피교사를 대상으로 설문을 실시하여 그린커피에 대한 인식정도와 그린커피의 교육 현황을 살펴보고 그린커피교육을 위한 요구사항을 분석하였으며, 커피전문가를 대상 으로 델파이기법을 통하여 그린커피교육 방향 및 학습 요인을 분석하였다. 이를 토 대로 그린커피 교육의 목표를 설정하고 교육내용을 선정하며 교과명 결정짓고 학습 할 단원까지 조직하고 유목화 하여 교수-학습이 이루어지기 위한 체제적인 기준을 제안하였다. 이는 그린커피 교육을 위한 교과과정을 계획하고 설계하는데 기반 자료 가 될 것이다.
