This paper focuses on the cooking that appears in Como Agua para Chocolate, a novel by Laura Esquivel, a female Mexican writer, and the movie of the same title based on the novel. The meaning of the cooking in this novel and the movie can be discussed on three levels. Firstly, food appeals to all five senses and usually gives rise to craving. In the process, food unlocks a sensual element and expands it to the open state that allows the body and the mind to communicate with other people. Secondly, food and the body are considered as one in different religious ceremonies or rituals. In those rituals a bodily secretion that is added directly or symbolically to the food has religious characteristics such as sacrifice, love, curse, punishment and purification, and the generated power therein influences the participants. Thirdly, a body absorbing food has a cannibalistic element, as Mikhail Bakhtin has mentioned. In other words, as our bodies and minds overcome their boundaries, a new community, liberated from the old order, is born. By emphasizing the sensual and emotional aspects of food, the writer challenges against the already-existing authoritarian order.

본 논문에서는 멕시코 출신의 여성작가 라우라 에스키벨이 쓴 소설 『달콤 쌉싸름한 초콜릿』과 이를 원작으로 만든 동일한 제목의 영화 속에 등장하는 요리에 초점을 맞춘다. 이 작품에 나타난 요리의 의미는 다음의 세 가지 차원에서 논의할 수 있다. 첫째 음식은 오감에 작용하여 욕망을 불러일으킨다. 그 과정에서 음식은 인간의 감각적인 요소들을 열고 확장시켜 몸과 마음을 소통 가능한 열린 상태로 만든다. 둘째 종교적인 의식이나 제례 속에서 음식과 몸은 동일시되는 경우가 많다. 이때 음식에 직접적이거나 상징적으로 첨가된 몸의 분비물은 희생, 사랑, 저주, 징벌, 정화 등 종교적 성격을 띠며, 그런 힘은 참여자에게까지 영향을 미치게 된다. 셋째, 음식을 먹는 몸은 미하일 바흐친이 언급한 카니발적인 변성과정을 겪는다. 즉 몸과 몸들이 경계를 넘어섬으로써 기존의 질서로부터 해방된 새 공동체가 탄생한다. 저자는 감각적이고 감정적인 것을 부각시킴으로서 정신적이고 관념적인 것들을 비판하고 있으며, 이는 궁극적으로는 기존의 권위체제에 대한 도전이라고 할 수 있다.
