Mushrooms are regarded as one of the well-known healthful foods and biopharmaceutical materials. Tricholoma matsutake is a kind of useful mushroom in Far-East Asia. The polysaccharides from Tricholoma matsutake have the structure of β-glucan. The polysaccharide is the major component of mushrooms that contains various biological activities such as anti-inflammation and anti-cancer effects. In this study, we studied watersoluble polysaccharide obtained from Tricholoma matsutake. The goal of this study is to investigate anti-inflammation activity of polysaccharides from Tricholoma matsutake in RAW 264.7 cells.
