Cudrania tricuspidata has been used as a traditional medicine for curing neuritis, inflammation and cancer in Asia1. Fermented herbal medicines might be more efficacious than conventional herbal medicines by increasing the absorption and bioavailability of the active compounds. In this study, antioxidant activities and bioconversion substances of Cudrania tricuspidata leaves extracts(CLE) fermented by lactic acid bacteria and yeasts isolated from soybean fermented food, were investigated. Used microorganisms for fermentation of CLE were five lactic acid bacteria(Pediococcus pentosaceus, Pediococcus acidlactic, Lactobacillus plantarum, Lactobacillus brevis, Enterococvcus lactis) and two yeasts (Zygosaccaromyces rouxii, and Wicherhamomyces anomalus). Antioxidative activities of the culture fluids fermented at 30℃ for 3 days were measured with SOD-like activity assay and bioconversion substances analyzed by using HPLC-DAD. The CLE fermented by E. lactis of the culture fluids showed the highest SOD-like activity. In bioconversion substances, kaempferol level in fermented CLE by E. lactis was 28.63 ppm and increased seven times than that before fermented CLE.
