Kimchi derived Enzyme as a Natural Antimicrobial Agent in Nano Filter Manufacturing

In this study, the possibility of kimchi derived enzyme as a natural antimicrobial agent in nano filter manufacturing was evaluated. The antimicrobial activity of Kimchi derived enzyme was examined by the paper-disk diffusion and minimum inhibitory concentration assay in the various temperatures to elucidate the antibacterial mechanism against gram negative and gram positive bacteria. The results showed that kimchi derived enzyme was significantly inhibited bacteria growth such as B. scereus, E. coli, S. aureus and Salmonella. Moreover, antimicrobial ability of this enzyme showed same effect under high temperature. According to these results, kimchi derived enzyme can be applied in various field requiring thermal or formula stability such as in development of air filter systems.
