Strain Selection and Optimization of Culture Condition of Aureobasidium pullulans Producing Immune Enhancer β-Glucan

β-Glucan is a very potent stimulator of the immune system that protects the body against viral, bacterial, and fungal infections, tumors, radiation effects, and stress-related immunosuppression. For enhanced production of β-glucan by black-yeast Aureobasidium pullulans, strain selection and culture condition optimization were performed. Among 13 strains of A. pullulans obtained from different culture collections, A. pullulans KG strain producing the highest amount of β-glucan was selected. This strain also produced the highest amount of total glucan and cell mass. Optimization of culture condition of NRRL 58012 strain was also conducted using statistical method of 25factorial design and response surface methodology. Under the optimum culture condition, 17.45±0.13% β-glucan was produced.
