Purification and Characterization of Antifungal Compounds produced by Lactic acid bacteria

Lactic acid bacteria (isolate K5, K12, K33) having pronounced antifungal activity to Gibberella moniliformis KACC 44023 were isolated from Kimchi. These strains were also identified as Lactobacillus plantarum subsp. plantarum, Leuconostoc mesenteroides subsp. mesenteroides, L. pentosus by 16S rRNA gene sequence analysis. The major antifungal compounds were purified by chloroform extraction, hydrophobic cartridge and reverse-phase HPLC analysis from the cell-free supernatant. The antifungal compounds exhibited broad antifungal spectrum against Aspergillus fumigatus KACC 42590, Penicillium roqueforti KACC 41354 and Fusarium culmorum KACC 42099.
