Fresh ginseng have to maintain sufficient quality required to be commercialized, but low quality fresh ginseng was produced during the manufacturing process. Ginsenosides have been regarded as the main effective component responsible for the biological activities. The purpose of this study was to investigate the possibility of increasing the content of ginsenosides from low quality fresh ginseng under several extraction conditions; water extraction(WE) at 100℃, high pressure extraction(HPE) at 300 atm and 60℃, medium pressure extraction(MPE) at at 120 atm and 70℃, liquify extraction(LE) at 240 atm and 85℃, ethanol extraction(EE) at 80℃. The amounts of Rh2, Rh1 and Rg3 by ginsenoside in fresh ginseng increased about 2~4 times at 120 atm and 70℃ for 20min, compared those from conventional water extraction at 100℃ (For Rh1, 620.08ppm vs 218.55ppm; for Rg3, 313.97ppm vs 155.22ppm; for Rg2, 415.21ppm vs 289.96ppm). Especially, for Rh2, 665.16ppm vs 289.96ppm which was known to be only in red ginseng. While, Rg1. Rf, Re,
Rd, Rc+Rb2 and Rb1 were increased at 300 atm and 60℃ for 20min; 4465.84ppm, 626.04ppm, 4219.84ppm, 1590.51ppm, 1836.29ppm and 5427.39ppm, respectively. It can be found that several important ginsenoside can be effectively extracted under specific conditions by temperature and pressure with water.
