This study was carried out in order to determine the biological activities such as antioxidant activities in the thirteen kind of natural plant pigments. Their antioxidant activities were measured by estimating DPPH free radical scavenging and nitrite scavenging ability activity. In addition, the amount of total phenolics and flavonoids were estimated. The highest total polyphenol content (404.2 ㎍/㎖) measured in the onion peel pigment, and this value was 392.8 ㎍/㎖ higher than that of the 'Rehmannia glutinosa' pigment (11.4 ㎍/㎖). The red cabbage had the highest total flavonoid amount which was 95.5 ㎍/㎖. The free radical scavenging activity using DPPH method was the highest in the red cabbage pigment. The nitrite scavenging ability showed the most remarkable effect exhibited to 91.9% by addition of ethanol extract 1 ㎎/㎖ from onion peel pigment. These results suggest that natural plant pigment had the potent biological activities, and that their activities exhibited differently depending on each kind of pigments.
