An extracellular lipid-producing strain, Rhodotorula glutinis K-501, was isolated from soil. The extracellular lipid produced by the cell was found to have good and stable emulsifying activity. Factors affecting the extracellular lipid production were studied to optimize culture conditions for maximum production. Sucrose and ammonium sulfate were selected as best carbon and nitrogen sources, respectively because they gave the highest concentration of product. The optimum C/N ratio was 50. Optimum concentrations of KH2PO4, Na2HPO4, and CaCI2 were 3.5, 1.0, 0.75, and 0.1g/L, respectively. The optimum temperature and initial pH were determined as 22℃ and 7.0, respectively. When the batch culture was conducted with a sucrose concentration of 60g/L under the optimized conditions, extracellular lipid was produced to a concentration of 8.1g/L with a high production yield of 51.9% based on dry cell weight.

세포외지질을 생합성하는 균주 Rhodotorula glutinis K-501을 토양으로부터 분리하였는데 이들에 의해 생산된 지질은 우수 하고 안정적인 유화특성을 나타내었다 세포외지질의 생합성을 극대화하기 위하여 지질의 생산에 영향을 주는 인자들을 검토하여 배양 조건을 최적화하였다. Sucrose와 ammonium sulfate를 각각 탄소원과 질소원으로 사용하였을 때 세포외지질의 생합성 농도가 높았으므로 최적의 성분으로 결정되었으며, 최적의 C/N비는 50이었다. KH2PO4, Na2HPO4, MgSO4, CaCI2 는 각각 3.5, 1.0, 0.75, O.1g/L일 때가 최적의 농도이었으며 최적의 온도와 pH는 22℃,7.0이었다. 최적의 조건하에서 sucrose 60g/L을 사용하여 교반식 발효조에서 회분배양을 한 결과 세포외지질이 8.1g/L의 농도로 생합성되어 단위세포 질량당 51.9%의 높은 수율을 얻을 수 있었다
