The nutritional composition of Muraenesox cinereus has been analyzed for medicinal and edible uses.1) Minerals in M. cinereus were found to be as follows; calcium (575.32 ), phosphorus (470.22 ㎎ ㎎), potassium (377.13 ㎎), sodium (118.73 ㎎), magnesium (28.51 ㎎), iron (3.55 ㎎), zinc (1.58 ㎎), copper (1.39 ㎎) and manganese (0.24 ㎎) based on 100 g of M. cinereus dry sample. Among total amino acids found in M. cinereus (100g dry weight), histidine content was the highest (71.2 ㎎) and cystine (69.79 ㎎), isoleucine (44.66 ㎎), threonine (25.32 ㎎), valine (16.15 ㎎), methionine (6.2 ㎎) and leucine (5.27 ㎎) were followed. Among six vitamins detected, the niacin content was the highest (2.03 ㎎) based on 100 g of dry weight, then pantothenic acid (0.37 ㎎), vitamin B2 (0.1 ㎎), vitamin B1 (0.07 ㎎), vitamin E (0.06 ㎎) and vitamin D3 (0.0031 ㎎)
were followed.
