이 연구는 춘천닭갈비가 왜 그 시절에 춘천에서 생겨나서 춘천닭갈비라는 이름으로 널리 퍼져 나가게 되었는지에 대한 답을 찾아가는 과정이다. 춘천닭갈비는 넓은 의미로는 모방 기술의 산물로서 ‘테크네(techne)’이며, 좁은 의미로는 춘천이라는 공간의 물리적인 주방에서 끊임없이 진화해 온 기술의 장소이다. 춘천닭갈비의 서사와 거기에 중첩되어 있는 춘천 사람들의 이야기에는 닭갈비를 중심으로 둘러앉아서 수고로움을 함께 나누며 공감하던 공동의 지향 같은 것이 담겨 있다. 설화에서 확인할 수 있듯이 물과 안개의 도시인 춘천에는 예로부터 물을 모방한 다양한 기술들이 전한다. 이와 마찬가지로 춘천닭갈비도 춘천 사람들이 만들어 낸 정주 기술의 일종이다. 근현대 춘천을 배경으로 한 소설에서 춘천의 도심은 안개에 싸인 어둡고 음습한 곳으로 그려진다. 그런 춘천의 도심에서 명동은 밝고 따뜻한 장소로서 춘천 로컬리티의 지형을 변모시켜 왔다. 그 심층 혹은 구심점이 춘천닭갈비 가게들과 춘천닭갈비 자체이다. 춘천닭갈비의 서사는 그 시절 춘천 명동에 모여든 사람들의 조금씩 다른 모든 이야기들을 담고 있는 상징적 장소성이다. 앞으로도 춘천닭갈비의 서사는 춘천 명동과 춘천 사람들의 이야기와 더불어 변화되어 갈 것이다.
This study is the process of finding an answer to why Chuncheon Dakgalbi was created in Chuncheon at that time and spread widely under the name Chuncheon Dakgalbi. Chuncheon Dakgalbi is ‘techne’ as a product of imitation technology in a broad sense and is a place of technology that has constantly evolved in a physical kitchen in a space called Chuncheon in a narrow sense. The narrative of Chuncheon Dakgalbi and the stories of the people of Chuncheon overlapped with it contain something like a common aspiration of sitting around Dakgalbi to share and sympathize with hardships. As can be seen in the tale, Chuncheon, a city of water and fog, has been handed down various technologies that imitate water since ancient times. Likewise, Chuncheon Dakgalbi is a kind of settlement technology created by the people of Chuncheon. In a novel set in modern Chuncheon, the city center of Chuncheon is depicted as a dark and shady place shrouded in fog. In the downtown area of Chuncheon, Myeong-dong has transformed the topography of Chuncheon’s locality as a bright and warm place. The in-depth or center point is Chuncheon Dakgalbi restaurants and Chuncheon Dakgalbi itself. The narrative of Chuncheon Dakgalbi is a symbolic place that contains all the slightly different stories of people who gathered in Myeong-dong, Chuncheon at that time. The narrative of Chuncheon Dakgalbi will continue to change along with the stories of Chuncheon Myeong-dong and Chuncheon people.
