본고는 아직 학계에 알려지지 않은 음식조리서 『술방』을 소개하였다. 이 문헌을 서지학적으로 검토하고, 이면지에 목판으로 인쇄된 시헌력의 연대기를 참고하여 1867년 이후 필사되었음을 밝혔다. 본문의 필체가 모두 동일하므로 조리법은 한 명이 필사하였을 것으로 추정하였다. 마지막에 적힌 한문 묵서를 근거로 충청남도에서 필사되었을 가능성이 있음을 밝혔다. 이 문헌의 내용과 구성이 동일한 음식조리서는 없으므로 『술방』은 유일본으로서 가치가 있다. 본문에 기록된 음식명은 총 59가지이다. 동일한 음식명이라도 조리 방법을 ‘ᄯᅩ ᄒᆞᆫ 법’이라 적으며 몇 가지로 제시한 음식도 있어 조리 방문은 총 72가지가 나타난다. 표기와 음운, 어휘 등 국어학적 특징으로 보아도 19세기 후기의 자료로 볼 수 있음을 밝혔다.
This paper introduced a Korean Culinary Manuscript Sulbang(술방) that is not yet known to the academic world. This thesis examined Sulbang bibliographically and reveals that this book was transcribed after 1867. This book must have been transcribed by one person because the handwriting is the same from beginning to end. In addition, It is possible that this book was transcribed in Chungcheong-do based on the Chinese characters written on the back of the book. Since there is no other cookbook with the same content and composition, Sulbang(술방) is valuable as a unique book. There are 59 kinds of food written in this book. If we calculate each recipe that makes the same food but in different ways, there are 72 recipes in this book. Based on the Korean characteristics of this book, this paper revealed that this book is a material from the end of the 19th-century.
