In the 17-19th centuries, Joseon dispatched 12 official diplomatic missions to Japan called the Joseon Tonshinsa. The Tonshinsa group recorded what they saw, heard, and felt while traveling through various cities in Japan. The historical records contain a number of articles that give a glimpse into Japanese society and culture at the time. In this paper, among the various articles recorded in the history of the Joseon, especially the articles on food culture were analyzed. In addition, these articles were compared and considered with the contents contained in Japanese old essays. First, the characteristics of Japanese food and the food culture that the Tonshinsa group saw and felt were examined based on the historical records and the technical contents of “Morisadamannko”, an ancient essay. Second, the fact that the Tonshinsa group were particularly interested in the traditional food of both countries, ‘Rice cake’, was examined through the various types of rice cake-related techniques included in the journal. And third, it was confirmed that Joseon people were curious about Namman through the civilizations of Namman that came before Joseon. Based on the records of the Joseon Tonshinsa and the contents of the Japanese old essay, who experienced Japan in the 17-19th centuries, it was possible to know that Japanese food at the time was different from that of Joseon. The characteristics of food culture could be assessed through the number of meals a day or the way of eating. In addition, Joseon people’s interest in Japanese food could be seen through detailed descriptions of the difference in shape and taste of the traditional food ‘Rice cake’, and sugar, a food ingredient of Namman.


17~19世紀の朝鮮は、日本に朝鮮通信使という公式的な外交使節団を12回派遣した。通信使一行は日本の多くの都市を経由しながら見たり聞いたり感じたことを使行録に記録した。使行録には当時の日本社会や日本文化がわかる記事がたくさん含まれている。本稿では、朝鮮の使行録に収録されている様々な記事のなかでも特に飲食文化に関する記事を分析した。そしてこのような記事を日本の考証随筆における内容とも比較、考察した。 第一に、通信使一行が見て感じた日本料理の特徴と食文化について、使行録と考証随筆である『守貞謾稿』の記述内容をもとに調べた。第二に、通信使一行が両国の伝統料理である「餅」について特に興味を抱いていたことを、使行録に見える様々な餅の関連記述を通して調べてみた。そして第三に、朝鮮より先に流入した南蛮の文物を通して、朝鮮人が南蛮に対して好奇心を抱いていたことを確認した。 17~19世紀の日本を直接体験した朝鮮通信使一行の記録と日本の考証随筆に収録されている内容をもとに、当時の日本の料理が朝鮮の料理と相違していることが分かった。一日の食事の回数や食事の方法を通じての食文化の特徴も考察した。また、伝統料理の「餅」の模様と味の違い、南蛮の食材である砂糖に関する詳細な叙述を通して、朝鮮人の日本料理に対する興味を窺うことができた。
