본고는 19세기 경북 방언을 반영하고 있는 의성김씨 학봉 종가 언간에 나타난 음식 관련 어휘를 재료명, 음식명, 기명명(器皿名) 등의 물명과 단위명사를 중심으로 어휘사적 측면에서 살펴본 것이다. ‘의성김씨 학봉 종가 언간’은 19세기 초중반에 주고받은 것으로 19세기 당시의 생활상 및 실제로 사용했던 일상어, 특히 일상 생활과 밀접한 물명을 여실히 보여주고 있고, 19세기 전반기의 경북 방언을 반영하고 있는 것이어서 국어사나 생활사, 복식사, 음식사 등 여러 분야에 걸쳐 매우 흥미로운 자료로 알려져 있다. 다만 이 자료에 나타난 음식 관련 어휘 특히 물명에 대해서는 아직 제대로 조망된 바가 없고 어휘사적 접근이 이루어지 바가 없어 본고를 통해 이 자료에 나타난 음식 관련 물명을 살펴보고자 한 것이다. 이 자료에 나타난 음식 관련 어휘 중 ‘젹쇠’와 ‘셕쇠’가 모두 ‘셕쇠’를 가리키는 명칭으로 사용되었음을 보여줘 어휘사적으로 매우 흥미로운 일면을 보였다. ‘명ᄐᆡ, 미역, 김댱’은 기존의 어휘사 연구에서는 해당 어휘의 출현 시기를 19세기 말 혹은 20세기 초에서 보았으나 이자료에 나타남으로써 19세기 중반으로 수정할 수 있는 근거가 되기도 하였다. 또 다른 자료에서는 확인되지 않았던 ‘곰국’의 고형 ‘고음’을 확인할 수 있었으며 ‘소(素)’에 대한 높임 표현의 어휘로 ‘소진’이 존재함을 확인할 수 있었다. 이와 같이 이 자료가 19세기 경상도 지역의 당시의 생활상 및 실제로 사용했던 음식 관련 물명을 여실히 보여 주고 있어 음식 생활사 연구에 있어서도 매우 중요한 자료가 될 것이다.
This study is to examine food-related terms appearing in Eongan used by the Kims’ Main Branch Hakbong(鶴峰宗家) of the Clan Euiseong(義城金氏), which reflect the 19th century dialect used in North Gyeongsang province, and especially in the aspect of etymological history, the food-related names such as ingredients, food and container and nouns used as unit. Among the food-related vocabularies listed in this study, including “jyeokshoi”(젹쇠) and “syeoksoi”(셕쇠), showed a very interesting aspect, while words like “Myeongtai”(명ᄐᆡ), “miyeok”(미역) and “gimdyang”(김댱) provided a basis for correcting the time of their appearance of corresponding words, from the late 19th or early 20th century to the mid-19th century. In addition, the word “goeum”(고음) was newly confirmed as the ancient form of “gomguk”(곰국), since it was not previously found in any other materials. It was also confirmed that the term of respect for “so”(素), referring to vegetarian dishes, or “sojin”(소진) did exist. As investigated, the material clearly showed food-related vocabularies used daily in life in the 19th-century Gyeongsang region, which is believed to serve as important data for researching food and dining history.
