The purpose of this study is to understand job satisfaction and factors affecting turnover intention of the hotel industry kitchen employees. As the result of the survey, I have supported that a series of the turnover mechanisms are necessary for the analysis of the turnover intention and factors of impact from the selection of appropriate factors. We have investigated the possible reasons for why the kitchen employees wish to change their jobs in order to provide a basis for making the counter-measure. For this purpose, we have selected 9 factors that could fluence the turnover intention through literature search and interviews with kitchen employees. Relative importance of each factors was assessed by analyzing the questionnaires from the 440 sample selected from 10 special grade hotels and 15 1st grade hotels. The results are as follows : The most common factors that underlie the turnover of the kitchen employees are satisfaction with reward contingent on performance, bureaucratic management, co-workers, feedback, pay, superiors, allowance of self-studies, job stability, task achievement. Finally, Throughout this study, I proposed strategies for turnover management observed during study. The objective of most of them was to increase commitment, reduce costs and strengthen job satisfaction in kitchen employees organization.
