본 연구는 경상북도 영천, 경산, 영덕 지역의 장의 명칭과 장 관련 관용표현을 조사해 여러 종류의 장을 포함하는 상위범주인 장의 명칭과 하위범주인 시기, 방법에 따른 장 명칭의 분화 양상을 살펴본 것이다. 경상북도 지역에서 ‘장’는 두 가지 의미로 나타나고 있었다. 상위범주로 된장과 간장을 통칭하는 ‘콩장’, ‘메주장’과 같은 의미로, 또 된장과 간장을 가르기 전의 상태를 ‘장’으로 표현하고 있었다. 이러한 장의 명칭은 일차적으로는 최종적인 식품에 따라 다시 ‘된장’과 ‘지렁, 지랑, 지랑물, 장물’로 구분되어 나타나고 있었고 이는 다시 이차적으로는 ‘시기, 방법’으로 구분되어 그 명칭의 세분화가 이루어졌다. 시기, 방법에 따른 명칭으로 ‘정월장’, ‘애달아쑤는장’, ‘빠꿈장’ 등이 사용되고 있었으며 방법 또는 상태에 따른 명칭으로 ‘덧장’ 등이 사용되고 있었다. 장의 명칭 외에도 장에 관한 재미있는 관용표현도 찾아볼 수 있었는데 대부분의 표현이 금기 표현과 장맛에 관한 표현이었다. 이들 표현들은 모두 생활 속에서 일어날 수 있는 재앙을 대비하기 위한 비방(秘方)의 의미로 사용되고 있었다. 경상북도 지역에서 사용되고 있는 다양한 장의 명칭과 관용표현을 통해 그 집안의 음식 맛을 좌우하는 장 담그기의 중요성을 다시 한번 확인할 수 있었다.
This study is to investigate the Jang's lexical items and the Jang-related idiomatic expressions in the area of Yeongcheon, Gyeongsan, Yeongdeok in Kyungsangbuk-Do, and then to examine out the aspect of diversification of the Jang's lexical items as a main category including various kinds of Jang and of the Jang's lexical items according to period, method as a subcategory. It is found out that in the first place ‘the Jang’ in the area of Kyungsangbuk-Do is being used in two ways. Jang is expressed into the same meaning as ‘Kong-Jang’, ‘Meju-Jang’ which are the generic term for Doenjang, Ganjang as a main category. Additionally, it is expressed into something which is in a state of not being divided into Doenjang, Ganjang. These lexical items of Jang are used divided into ‘Doenjang’ and ‘Jireong, Jirang, Jirangmul, Jangmul’ according to the food finally made, which in the second place is divided by ‘period, method’, and finally its lexical items are subdivided. ‘Jeongwoljang’, ‘Aedarassuneunjang’, ‘Ppakkumjang’, and so on are being used as the lexical items according to ‘period, method’. And ‘Deotjang’ and other names are being used as the lexical items according the condition of Jang. Apart from the lexical items, interesting idioms about Jang are found out, which are mostly of the taste of Jang and taboo expressions. All these expressions are being used as a meaning of a secret magic method to protect any disasters which may happen in ordinary lives. The various lexical terms and idiomatic expressions of Jang tell us that the making of Jang is very important to a family, because the taste of food in a family depends on Jang.
