이 글은 100년 전 청주에서 간행된 것으로 추정되는 『반ᄎᆞᆫ등속』의 언어 문화적 가치와 표기법의 특징에 대하여 살펴보는 것이 목표다. 이 책은 크게 두 가지 측면에서 중요한 가치를 가진다. 하나는 언어적인 측면에서의 가치인데 청주 지역에서 필사된 음식 조리서로서는 최초의 문헌으로 100년 전의 언어 사실에 대한 일면을 엿볼 수 있다는 점이고, 다른 하나는 당시 청주의 반가(班家)에서 어떤 재료로 무슨 음식을 어떻게 해 먹었는지를 알 수 있어 청주지역의 음식문화에 대한 일면을 엿볼 수 있다는 점이다. 이 책은 100년 전 청주 강내면 상신리에 살던 진주 강씨 문중의 누군가에 의해 쓰여진 것이다. 책의 내용을 통하여 청주 지역 반가 음식의 일면과 식재료의 유통 경로에 대하여 살펴볼 수 있다. 교통이 발달하지 않았던 당시에는 금강수운을 통하여 해산물을 공급받고 나물이나 버섯 곡식 등은 문헌의 검토를 통하여 지역에서 조달된 것을 알 수 있다. 『반ᄎᆞᆫ등속』에 나타난 표기법의 특징은 한 마디로 혼란스러움이라고 할 수 있다. 표기법이 혼란스러웠던 것은 『반ᄎᆞᆫ등속』이 쓰여질 당시에는 한글맞춤법이 정비되지 않았기 때문이다. 그러나 혼란스럽게 보이는 표기법도 무질서한 혼란이 아니고 나름대로 일관된 태도를 취하려 했다는 것을 알 수 있었다. 그 일관성의 바탕에는 표기는 달리 하더라도 동일한 발음을 표기한다는 전제가 깔려 있다. 『반ᄎᆞᆫ등속』에는 위에서 살펴보았던 표기상의 혼란 외에도 청주 지역 방언형들이 많이 보인다. 이들 방언형을 통하여 청주 방언의 특징을 엿볼 수 있을 것이다. 청주 지역에서 사용되는 어휘의 이형태나 여러 가지 음운현상을 보여주기 때문이다. 이에 대한 논의는 다음으로 미룬다.

The paper aims to explore the linguistic and the cultural values of “반등속”, which is assumed to be transcribed about a century ago, and to look into the features of its orthography. The book “반찬등속” has two significant meanings. From the linguistic perspectives it is meaningful as it is the first recipe book reflecting the Korean language of early 1900s, and from the cultural perspectives the book represents Korean cuisines of the upper class in Cheongju region, such as what they ate, how they cooked them with what kind of ingredients. The research supports the idea that the recipe book was written by the one from Kang’s family in Cheongju region. The book also reveals not only the cuisines of the upper class in Cheongju region, but also how they got the ingredients. Since the overland transportation was not well developed in 1900s they got sea foods using water transportation by the river called Keumgang, and mushrooms, herbs and vegetables were obtained in the local area, Cheongju. The characteristics of the orthography shown in “반ᄎᆞᆫ등속” is chaotic because the spelling system of the Korean letters called Hangeul was not systematically organized when the book was written. It is noticed, however, the writer’s efforts to be consistent in writing. That is, all the different spellings indicated the phonetically the same sound.
